- You need 2 cup of Fried Onion.
- You need 1/2 tsp of Turmeric powder.
- It's 1 cup of Curd.
- You need 3/4 tsp of Salt.

- It's 2 tsp of Kashmiri chilli powder.
- Prepare 2 tbsp of Oil.
- You need 1 cup of Water.
- You need as per taste of Salt.
- It's 3 tbsp of Biryani masala.
- It's For of Rice-.
- Prepare 2 cups of Basmati Rice.
- You need 2 of Black Cardamoms.
- You need 4 of Green Cardamoms.
- Prepare 1 inch of Cinnamon stick.
- You need 2 of Bay leaves.
- It's 4 of cloves.
- It's 2 tbsp of Ghee.
- Prepare as per taste of Salt.
- It's 31/2 cups of Water.
- It's For of Garnishing-.
- You need 2 tbsp of Ghee.
- Prepare 1/2 tsp of Saffron.
- You need 2 tbsp of Warm Milk.
- You need 1/2 cup of Fried onion.
- It's 2 tbsp of Finely chopped Coriander leaves.
- Prepare 6 of Fried Cashews.
- You need 8 of Fried Raisins.
Mughlai Chicken Biryani step by step
- Clean and wash chicken pieces..
- Blend together all the ingredients for ground masala and make a fine paste..
- Add this paste in chicken pieces..
- Add all the ingredients mentioned For marination and mix well..
- Set aside for at-least 1 hour..
- Heat 2 tbsp oil in a pan..
- Add the marinated chicken..
- Add Kashmiri chilli powder, biryani masala, water and mix well..
- Cook on medium heat until the chicken is cooked well and the gravy becomes thick..
- Add salt if needed and set aside..
- Wash and soak the rice for 20 minutes..
- Drain the water completely and set aside..
- Soak saffron in warm milk and set aside..
- In a big pan or cooker heat ghee..
- Add whole spices mentioned for rice..
- Add soaked and washed rice and fry for a minute..
- Add water and salt..
- Close the lid and cook till 3/4 done or in cooker cook for 1 whistle..
- Let it cool completely..
- In a biryani pot, add 2 tbsp of ghee and spread the ghee evenly to the bottom of the pot..
- Then put the prepared half of chicken masala, and spread it evenly..
- Then layer half of the rice over the chicken masala..
- Sprinkle ¼ cup fried onion and chopped coriander leaves..
- Then layer rest of chicken masala..
- Again layer the rest of the rice on top of it..
- Sprinkle remaining fried onion, chopped coriander leaves and half of fried Cashews and raisins..
- Finally, pour 1 tbsp of melted ghee and the saffron milk on top..
- Close the biriyani pot with a tight fitting lid..
- Put the biryani pot on the stove, and cook for about 15 minutes over low flame..
- Remove from heat, mix the rice and chicken from the bottom of the pan using a long spoon..
- Serve hot with Raita or salad..
